With the first chill of autumn, the slippage begins. The deslío is a task consisting of separating the clear wine from the lees formed at the bottom of the tank. The result is a totally dry white wine, slightly fruity and slightly acidic, pale and delicate, which will form the basis for the subsequent production of sherry wine.
The lees are the solid matter produced during the fermentation of the must and are deposited at the bottom of the vessel. The lees contain many of the grape’s own yeasts and contribute to a smooth fermentation process.
